Ingredients
  

  • 2 medium apples: choose any variety, but Honeycrisp or Fuji work great
  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • 1 tablespoon of peanut butter or almond butter
  • 1 teaspoon cinnamon
  • 2 tablespoons honey or maple syrup
  • 1/2 cup of milk
  • 1/4 cup chopped nuts: walnuts, pecans, or almonds
  • 1/4 cup dried cranberries or raisins
  • A pinch of salt

Instructions
 

  • Prepare the Apples: Begin by washing and coring the apples. Keep the skin on for an added boost of fiber. Slice them into bite-sized pieces.
  • Cook the Oats: In a medium saucepan, combine the rolled oats, almond milk, cinnamon, and a pinch of salt. Mix thoroughly and heat over medium, allowing it to gently simmer.
  • Add Apples: After about 2 minutes of cooking the oats, toss in the apple slices. Stir to coat the apples in the cinnamon mixture. Cook for another 5 minutes, until the oats are soft and the apples have slightly caramelized.
  • Add Toppings: Remove the saucepan from heat and stir in the peanut butter or almond butter. Add the chia seeds, dried cranberries, and nuts. Drizzle with honey or maple syrup to taste.
  • Serve: Divide the mixture into two bowls and enjoy a hearty, nutritious breakfast!
